Añejo Highball: Dale DeGroff's 1990s Rum Classic

The Añejo Highball was created in the late 1990s by Dale DeGroff at The Rainbow Room, New York City, USA Difford's Guide. The Anejo Highball was created by famed mixologist Dale DeGroff to pay homage to the celebrated bartenders of Cuba from back in the twenties and thirties MyBestCocktails.

Amid the apple- and lychee-flavored 'tinis that defined the '90s emerged a more muted class of cocktails that had a lasting impact on bartending methods around the world. The Añejo Highball was among this class, offering a lesson in restraint in its simple combination of rum, Curaçao, lime juice and ginger beer PUNCH.

The cocktail represents DeGroff's contribution to the modern cocktail renaissance, emphasizing quality ingredients and classic techniques over the flavored vodka cocktails popular at the time.


RECIPE:

2 oz aged rum

½ oz orange curaçao

½ oz fresh lime juice

2 dashes Angostura bitters

2-3 oz ginger beer

Lime wheel and orange slice for garnish

Method:

  1. Add rum, curaçao, lime juice, and bitters to highball glass filled with ice

  2. Stir briefly

  3. Top with ginger beer

  4. Garnish with lime wheel and orange sliceg
