Maple Corn Muffins

A basket of small bakes can make a brunch table feel complete without a frosted centerpiece. PJ Hamel’s maple corn muffins at King Arthur Baking use yellow cornmeal and maple syrup, with milk, egg and butter in the batter.

Our serving suggestion is to place the muffins between a bowl of apple slices and a platter of roasted vegetables. That leaves guests free to build a sweet or savory plate. For a quieter breakfast, put one muffin on a small plate beside plain yogurt and a cup of coffee; the rest of the table needs very little decoration.
