Miso Butter Salmon With Mushrooms

Seared salmon with glazed mushrooms and chives on a dark oval plate.

The appeal of this salmon is the way the sauce ties the plate together. In Namiko Hirasawa Chen’s recipe at Just One Cookbook, miso, butter and Japanese pantry seasonings accompany pan-fried fish and mushrooms. Shiitake slices and small shimeji clusters make the meal feel complete without a separate vegetable casserole.

Our serving suggestion is to keep the rest of dinner quiet. Plain steamed rice gives the sauce somewhere to go, while a small bowl of cucumber with rice vinegar would offer a cool contrast. Present the fish on a broad plate so the mushrooms sit beside it instead of hiding the browned surface.

This is a good fit for a dinner where you want one clear centerpiece. Rather than adding several strongly seasoned sides, spend that attention on setting out the meal together. A little space on the plate makes the glossy sauce and orange fish stand out.
