Parsnip Soup With Parsley Cream

A quiet first course can give an autumn meal a different pace. The parsnip soup published by Good Food, credited in its introduction to Monica Galetti, pairs a pale root-vegetable base with parsley cream and small golden parsnip cubes. The garnish gives the bowl something to look at and something to bite, without burying the soup underneath toppings.
For our table, we would serve it in a modest portion before a mushroom dish or roast chicken. A dark bowl makes the pale soup and green cream easy to see; a small slice of toast on a separate plate keeps the presentation simple. Those are Brunch God serving suggestions, rather than additions to the source recipe.
This is a useful choice when you want the opening course to feel considered without filling the table with several small dishes. Let the parsley remain the clear finishing flavor, and give the bowl a little breathing room on the place setting.
