Roasted Carrot Soup

A bright orange soup can make an ordinary October lunch feel deliberately put together. Kathryne Taylor’s Creamy Roasted Carrot Soup at Cookie and Kate starts with roasted carrots and finishes as a smooth puree. Despite the name, the classic version does not rely on cream.
Taylor combines the carrots with onion, garlic, coriander and cumin, then finishes with butter and lemon. The recipe also explains several variations, but the classic version is the focus here. Choosing one version before shopping keeps the seasoning and garnish coherent.
Our serving suggestion is a shallow bowl beside a crisp mushroom toast, with the toast kept on its own plate. The contrast would give a pureed soup something substantial to accompany it without turning the bowl into a collection of toppings. Warm orange against a simple pale tablecloth is enough visual interest; there is no need for a decorative cream spiral.
