Cabbage deserves more than a supporting role in a cold-weather meal. This soup feature points to Deb Perelman’s Smitten Kitchen adaptation of a Joshua McFadden recipe from Six Seasons. Farro gives the bowl substance, while softened cabbage, broth and shaved Parmesan create a meal with very little need for decoration.

Our serving suggestion is to bring the pot to the table with small bowls and let the soup begin a relaxed evening meal. A grain-based soup is also an appealing alternative when a menu already has plenty of bread. Keep any extra cheese alongside it so each person can decide how rich a finish they want.
