Tamagoyaki: Japanese Rolled Omelet

A sliced omelet changes the rhythm of breakfast. Instead of one large egg dish occupying the plate, tamagoyaki gives the table a row of tender, neatly portioned pieces. Nami’s classic version at Just One Cookbook uses a lightly sweet, soy-seasoned egg mixture and builds the roll in layers.
For a brunch spread, we would give those slices some space rather than burying them beneath toppings. Steamed rice and a separate vegetable dish make a useful framework for the meal. The rolled shape also provides a visual change alongside a collection of bowls and toast.
This is a technique-led recipe, so Nami’s accompanying demonstration is especially useful for understanding how the layers come together. Find quantities, both pan methods and the video in Nami’s Classic Tamagoyaki at Just One Cookbook. Browse our food recipe collection for more breakfast ideas.
